How to Meal Prep When You Hate Meal Prep

Confession: I don't always love meal prep. 

Not the version you see online anyway, the one with twelve identical containers of chicken, rice and sad steamed broccoli lined up in the fridge like little soldiers. 

By Wednesday I can't look at them, by Thursday I'm ordering in, and by Friday there are two containers I'm quietly tipping out. Sound familiar?

Here's the thing though. I still prep. I just do it in a way that actually fits real life with kids, work and a fridge that never seems to stay full. And it's made my weeks so much easier.

So if the words "meal prep" make you want to lie down, this one's for you. No Sunday cook-a-thon required.

First, drop the all-or-nothing idea

Meal prep doesn't mean cooking every meal for the week in one go. That's the version most of us try once, hate, and never do again. It just means doing a few small things ahead of time so future you has less to think about. That's it. Even one thing counts. If all you do is boil some eggs and chop a few veggies, you've prepped. Take the win.

Prep components, not meals

This is the shift that changed everything for me. Instead of building full, finished meals, I prep building blocks. A protein, a carb, some veg, a good sauce, done. Then through the week I mix and match them into whatever I feel like, so nothing gets boring and nothing goes to waste.

The same roast chicken becomes a wrap on Monday, a rice bowl on Tuesday and a quick salad on Wednesday. Same effort up front, completely different meals. That variety is the whole reason this actually sticks.

What I actually prep

You don't need all of these. Pick two or three and you're already ahead. My usual go-tos:

  • A protein or two. A tray of chicken in the oven, some mince cooked off with a bit of seasoning, or a batch of boiled eggs (on the days eggs are a yes for me).
  • A carb. A big pot of rice, some roast potato or sweet potato, or cooked pasta. Whatever you'll actually reach for.
  • Veg, two ways. I roast a tray of whatever needs using, and I chop a pile of raw stuff like carrot, cucumber and capsicum so there's always something crunchy ready to go.
  • A sauce or dressing. This is the secret weapon. A garlic yoghurt, a simple dressing, a pesto. It's what makes the same few ingredients taste different every single day.
  • Something for the mornings. A few jars of overnight oats or chia pudding so breakfast is handled before the week even starts.
  • Snacks, portioned out. Five minutes bagging up nuts, cutting fruit or portioning yoghurt saves you from the 3pm raid every time.

How it plays out through the week

With just chicken, rice, roast veg, raw salad and a garlic yoghurt in the fridge, here's a week that never feels like leftovers:

  • Chicken and rice bowl with roast veg and a big spoon of that yoghurt
  • Chicken wrap with the raw salad
  • Rice, roast veg and yoghurt as a quick vegetarian bowl
  • Chicken chopped through a fresh salad for a lighter one

Four dinners, one cook. That's the magic.

What thirty minutes can look like

You don't need a whole afternoon. On a good Sunday I'll put a tray of chicken and a tray of veg in the oven, get the rice going on the stove, and while all that cooks I chop the raw veg, mix a garlic yoghurt and make a couple of oat jars. Thirty to forty minutes, mostly hands off, and the week suddenly feels so much calmer.

A few things that make it stick

  • Start small. Pick two things to prep this week, not ten. Momentum beats a big burnout Sunday you never repeat.
  • Cook once, eat twice. Double whatever you're making for dinner and lunch sorts itself out.
  • Store it smart. Keep wet and dry things separate so nothing goes soggy, and dressings on the side until you eat.
  • Use your freezer. Cooked mince, soups and cooked rice all freeze beautifully. A stocked freezer is future you's best friend.
  • Don't prep food you won't want by Thursday. If you know you'll be sick of it, prep the components and just change the sauce.

Meal prep doesn't have to be rigid, joyless or all or nothing. It's a handful of small things that give you a head start when life gets loud. Do what you can, skip what you can't, and let the sauce do the heavy lifting.

Start with one thing this week. That's all it takes.
