
Chicken Burrito Bowls

Description
Burrito bowls are one of my favourite dinners - they are so easy and perfect for the family because everyone gets to pick their own, and everyones happy! With this recipe, you can swap out the protein (chicken) to something that is more suitable for you. For example, beef, prawns, turkey mince, fish etc.
Ingredients
400g chicken mince
1 cup of cooked Brown Rice
1 Small Sweet Potato
1 handful of mesclun lettuce
1/2 can of Corn, drained and rinsed
1/2 can of black beans, drained and rinsed
1/2 can of chickpeas, drained and rinsed
1 avocado
1/2 Red onion
1 taco seasoning packet
1/4 Tsp of Garlic Salt
1/4 Tsp of Cayenne Pepper
1/4 Tsp Paprika
6 cherry tomatoes
Cooking Directions
Preheat oven to 180 degrees Celsius.
Slice sweet potato thinly and place onto a lined baking tray with a sprinkle of salt, pepper and olive oil. Cook for 30 minutes, or until soft.
Add chickpeas and black beans, olive oil, garlic salt, paprika, cayenne pepper to a hot pan and cook for 4-5 minutes. Set aside.
Cook brown rice according to packet method.
Chop mesclun lettuce into thin strips
Add chicken mince into a pan and cook until chicken is cooked through. Add taco seasoning and stir through.
Chop the tomatoes, red onion and avocado into small squares. Season with salt and pepper in a seperate bowl.
Divide all ingredients between 3-4 bowls and start building your own burrito bowl!
Season with one big squeeze of lime and a sprinkle of pepper to finish!
